Advice on excursions & beaches

Hey everyone!
Just a few questions:
Any suggestions for good excursions in Belize, Roatan, Cozumel, and Cancun?
These were what I was considering:
Belize -- cave tubing (through NCL or Extreme???) + what else?
Roatan -- horse tour?; visiting cenotes by jeep
Cozumel -- possibly atv, kayak, snorkel; 4x4 caverns and beach; beginning scuba; sea lion encounter
Cancun -- maybe a jeep tour, snorkel/scuba;

What are the best beaches in Roatan?
Are Xel-Ha, Xpu-ha, and Xcaret pretty much the best beaches in Cancun? What are the differences?
Is there surfing at any of these spots?
Also, I was just wondering what people think about the different Cozumel beaches. I'm debating between Playa Sol (I love watersports), San Francisco Beach (heard it has on-beach couples massages, Chakanaab park (dolphins, sea lions, etc), and Paradise Beach for its quietness. What does everyone think?
I know I can probably make more than one beach but I was also strongly considering etiher (1) Introductory Scuba or (2) atv / jeep, kayak, snorkel...I just don't know if it would be better to just enjoy the beaches and other activities or do an excursion.
I would definitely appreciate any advice!

Have only been toCozumel. Took a taxi from the pier directly to Chankanaab. Its a wonderful park with snorkeling, restaurants, equipment rental and a botanic gardens with HUGE iguanas.

Xcaret is south of Playa del Carmen which is about an hour south of Cancun. Not really close. The park is very modern with plenty of little coves for snorkeling, picnic tables under shade, an aquarium, Butterfly pavilion, Dolphin Cove, etc. Completely worth the admission.
