You are nearly 100% sure of getting a port (ocean) side cabin if you book the guarantee. Only do so if you can be happy with the $600 you save. Otherwise, book the cabin you really want.For my money, your itinerary is one of the few where I think which side your cabin is on will matter, and I would personally choose to insure I got on the starboard side by paying the additional money.
