do they card on the ship, or do they know your age from your ship card thing?

They know your age from your S&S. While company policy is 21+, an individual bartender might "bend the rules". Some ports have lower drinking ages.

Even Royal Caribbean recently did away with their 18 and over drinking age. If you were 18-21 and a parent or guardian approved, you were allowed to order beer or wine, but that is no more for North American cruises!
