Beef brisket recipe help please!

Does anyone have a good crock beef brisket recipe? I saw Ina make this on Food Network the other day and the reviews are 5*. She made it in the oven, but I want to make it in the crock. But every time I see tomato juice or tomato soup in a recipe I cringe a little bit! ::eek: (Red :))I wouldn't put the carrots or celery in it. DH hates having veggies mixed in with his meat. I am more into meat gravy vs. tomato sauce/gravy and I know there is a Lipton onion soup version out there somewhere. BTW, my brisket is small; a little over 3 lbs, so I would 1/2 all these ingredients. :chef:help


6 to 7 pounds beef brisket
2 tablespoons kosher salt
2 teaspoons freshly ground black pepper
1 tablespoon minced garlic (4 cloves)
2 teaspoons dried oregano leaves
1 pound carrots, peeled and cut into 2-inch chunks
8 stalks celery, cut into 2-inch chunks
6 yellow onions, peeled and sliced
6 fresh or dried bay leaves
1 (46-ounce) can tomato juice

You might give this one a try. Only 2 Tbsp ketchup, so it shouldn't be too "tomatoey" -

Prep Time: 15 minutes
Cook Time: 9 hours

Ingredients:
4 lbs. beef brisket (NOT corned)
4 cloves garlic, minced
2 Tbsp. ketchup
1 Tbsp. red wine vinegar
1 Tbsp. brown sugar
1/2 tsp. salt
1/8 tsp. pepper
2 onions, thinly sliced
2 Tbsp. flour
1/3 cup water

Preparation:
Place onions in bottom of slow cooker, then place brisket, fat side up, on top of onions. Sprinkle garlic on top. Combine ketchup, vinegar, and brown sugar in small bowl and then rub into beef. Add enough water to coat the bottom of the cooker. Cover crockpot and cook on Low 8-10 hours.

For gravy, remove brisket from the slow cooker place on serving plate, and cover tightly with foil. Turn crockpot temperature to High. Mix flour with 1/3 cup water, add to crockpot, and bring to a boil, stirring frequently with wire whisk. 16 servings

I would just use Lipton Onion Soup mix and beef broth instead of the tomato juice. You could always thichken later if needed with Corn Starch.

I usually just add beef broth and steak seasoning.
