Hi there! I don't know if I will be of much help, but I am going to these same places (minus cancun) also in Dec and i am not into snokeling either. Here is what I have found out. In Belize there are ruins, that may have enjoyed, but are not the big or developed. I have heard RAVE reviews of Reggie's Cave tubing tours. Basically he just takes you on a 30 min. , NOT strenuous walk through the jungle and then you tube (inntertube) down a gentle flowing river through all sorts of beautiful caves for about an hour. On the way home he stops for you to shop. He assured me the the water was clean, and there were no huge bugs or anything in the water. He says he gets you back faster than the cruise ships, but if for some reason you are late, he has a boat to take you to the ship. This is $65 per person, but I have heard many on this board and others say it is the highlight of their trip. his site is

In Cozumel there is plenty of great shopping (I have been there before) to be had and, as I assume of Cancun as well, there are many more comercial - type things to do than in the under developed Roatan and Belize. I am planning on going to either Paradise bech, or Mr. Sanchos, which I have heard great things about. Both you can eat, lay on the beach and relax, swim, ect. Hope any of this helps.
