I'm sure not as rich and decadant as Judy's but very, very easy to make and very good too!

Ingredients:

MASCARPONE CHEESE, 6 ounces
COCOA POWDER, 3 tablespoons
CONFECTIONERY SUGAR, 2 tablespoons
COFFEE FLAVOURED LIQUEUR, 5 tablespoons
PURE VANILLA, 1 teaspoon
WHIPPING CREAM, 1/2 cup
LADYFINGERS, 12

Method:

1. Beat the cheese, cocoa powder, confectionery sugar, 3 tablespoons of the coffee liqueur and 1/2 teaspoon of the vanilla extract with a whisk 'til smooth and blended well.
2. In another bowl, whip the whipping cream until soft peaks form.
3. Fold the whipped cream into the cheese mixture.
4. Combine the remaining coffee liqueur and vanilla in a small bowl.
5. Cut the ladyfingers in half length-wise.
6. Line the bottom of a 1 quart bowl with the ladyfingers and brush with coffee liqueur and vanilla mixture.
7. Spoon 1/3 of the cheese mixture on top of the ladyfingers.
8. Repeat 3 more times until all the mixture is used up, using the ladyfingers between each layer of cheese.
9. If there are any ladyfingers left over, us to garnish on top with whipped cream.
10. Dust with a little cocoa powder if you like.
11. Cool in the refrigerator before eating.

Yours is similar and sounds delish! Of course I took 3 recipes I had and decided what I liked about the 3 and combinted them. :lol

Thanks for sharing your Beryl I certainly will give it a try.

Thnx Beryl, I've copied your recipe and will give it a whirl. If I go to the store today, I may even try it today. :)
