I have always said if you need to know anything about cruising or carnival cruise lines this is the place to go. So here goes my quest. My wife and I would like to get the receipe for the "Chocolate Melting Cake" that Carnival serves in it's dining rooms. We did not purchase a receipe book because quite frankly, we did not think about it tell we left the ship. So does anyone out there have the receipe and would be willing to share it with us? We could even work out a deal, the receipe for say a receipe for Cayman Kruggerrands, a fine one containing rum and cocoanut and came from the Cayman Islands. So do I have a taker on this fine offer??????

I have practically gone into a chocolate coma after I ordered TWO of those cakes for dessert one night on the Fantasy!
This is not the Carnival recipe (I looked in my Carnival cookbook, and it is not there), but this one looks pretty close.

Molten Chocolate Cake

1 stick unsalted butter
6 oz. good quality bittersweet chocolate
2 eggs
2 egg yolks
1/4 cup sugar
Pinch of salt
2 tbsp. all-purpose flour

Preheat the oven to 450. Butter and lightly flour four 6-oz. ramekins. Tap out the excess flour and set the ramekins on a baking sheet.

In a double boiler over simmering water, melt the butter with the chocolate. In a medium bowl, beat the eggs and egg yolks, sugar and salt at high speed until thickened and pale.

Whisk the chocolate until smooth. Quickly fold it into the egg mixture along with the flour. Spoon the batter into the prepared ramekins and bake for 12 minutes, or until the sides of the cakes are firm but the centers are soft. Let the cakes cool for about one minute and then cover each with a dessert plate. Carefully turn each one over, let stand for 10 seconds, then unmold. Serve immediately.

Warm Chocolate Melting Cake

Ingredients
1 lb dark chocolate
1 lb butter
10 eggs
1/2 cup plus 4 tbsp sugar
1/2 cup less 4 tbsp flour

We scaled Carnival's recipe down but couldn't help but share it in its original form. Serving 90, it called for 8 pounds of dark chocolate, 8 pounds of butter, 80 eggs, 5 pounds of sugar and 5 pounds of flour! This kitchen-friendly version will make 10 to 12 individual cakes. Make sure that the eggs are at room temperature and chocolate is still warm when combining.

1. Melt the chocolate and butter together.

2. In a separate bowl, mix the eggs and sugar; whisk for a few minutes, then add the flour.

3. Add the egg mixture to the melted chocolate and mix.

4. Pour the mix into greased individual serving dishes. Bake in the oven at 200 degrees Celsius (between 375 and 400 Fahrenheit) for 14 minutes.

Thanks for your help on this important quest. For your help I have sent you via personal message the top secert receipe for Cayman kuggerands. (I can not post them in case I may need to use it as a bargaining chip again)LOL I hope you enjoy them and will pass them around for others to enjoy. Again thanks for all your help.
