Doing Cozumel on your own is an easy thing.  You'll be able to rent a jeep just off the ship.  Some great snorkeling spots to try are Dzul Ha and Chankanaab.  Both are also great places to stop for a "cold beverage".  Nachi Cocom is a great beach to stop at as well.  No snorkeling, but a good restaurant, bar and pool with a beautiful beach.  Coconut's has a great view and Mezcalito's has fantastic margaritas.  Have a great time!
