We just got back from this cruise so I think I can help

1) We've stayed on the Queen Mary, and know where that is. Is the pier for the Ecstacy within walking distance of the Queen Mary (with a couple rolling suitcases in tow)?

Yes, it is right next door.  Actually, early check in is on the Queen Mary so you should be set.  We got their at 11:30am to check in and was on the ship, eating lunch at 12:30pm.  If you get their early, it is a very quick and easy process.

2) We have transfers from LAX to the pier. Will they take the luggage from the bus to the ship? Or do we have to get the luggage from the bus to the ship?

With the airport transfer, they take the luggage to the ship directly.

3) How early is too early to get there? We're actually staying in Anaheim for a couple days, then back to the airport to get our transfer bus to the ship. All we're going to do on the day we go to the ship is eat breakfast at our hotel, finish packing, and go!

The earlier the better.  Like I said, we were there at 11:30am so I am not sure if it gets crazy busy later.

4) Any menus or capers out there for the Ecstacy? Or should I just expect to see the same as I have from the great sites (and other Carnival ships)?

I have my capers and could scan them and send them to you

5) Any other advice for first time cruisers, particularly on the Ecstacy would be much appreciated.

I was just a first time cruiser so i am not sure what advice to give.  Just be prepared for a fun time and excellent meals.  The dinners were superb and the service was top notch.
