I sailed the Liberty 2 years ago so my experiences may not be what you do.

Dining Room - I have not had a bad dinner in the dining room but I may not be as picky as some.
Buffet - I enjoyed the buffet early in the week but as the week goes on some of the salads are not quite as good. You should never go hungry on any cruise.
Pool & Water Slide - The pool near the water slide is smaller than I would like but the slide is great (It is closed during periods of high wind). The pool at the stern is a little larger and most time less crowded.
Crowds - I have cruised Carnival several times and found that if you avoid the Spring Break and Graduation time cruises the crowds don't seem to be any worse than on any other cruise.
Entertainment - While I don't have any kids many of my friends who cruise on Carnival have been satisfied with the manner in which their kids were cared for and the entertainment provided. Carnival does a pretty good job of keeping similar aged kids together with activities for their age groups.
