Carnival Valor April 29th

My fiancee and I are going to be on the Carnival Valor April 29th. We will be traveling to Hondoras, Belize, Costa Maya, and Grand Cayman. We have not been to Hondoras or Belize before. We are interested in cave tubing and the zip lines. We never have a good experience when we book directly from the boat. Does anyone know of any good companies we can go with?
