Celebrity cuts back on food service?????

Have heard and read a lot lately about food service cutbacks on Celebrity ships, but so far no one has been very specific. Lots of hype, not much substance - rumors about cutting back on variety, portion size, and new menus being introduced reflecting specific changes.
Curious to know from veteran Celebrity cruisers who've sailed often prior to late November (the date those cutbacks were supposedly implemented), and since then as well. Did you notice any cutbacks in food service, and if so, what has changed?
We've sailed Celebrity 16 times - most recently, in early November, when nothing was mentioned about upcoming changes in food service - and are curious to know exactly what changes we will notice on our next cruise.

The cutbacks were mainly dealing with the late night buffets. X wanted to give the pax less quantity and better quality. The only problems we have seen with food service is the change in kitchen crews. New chefs coming onboard might not be as good as the ones who left for shore leave. Sometimes the food quality and preparation quality take a dip until the new crew gets acclimated. There have been problems and complaints in mostly isolated instances. The menus are supposed to be updated at the first of the year...I can't imagine that they want to make the food worse than better. They seem to be putting the emphasis on quality with "gourmet bites" for the late night snacks. The recent increase in beef prices also had an effect on the menus but I think that the beef prices will be coming down shortly...with the mad cow scare.

We were on The Millennium in November and will be on the Summit in February and we sailed twice last year on Celebrity and if anything the food on our November cruise was even better then last year. We do eat at least two or three nights at the speciality restaurant but the food at the regular dining room was very good. We like Celebrity for their better food then all of the main stream cruise lines.

I just got off another site and there is a lot of discussion on a recent Century Cruise. We will have to stay tuned on this one. Seems that a lot of past X pax are now complaining...but some others are saying that everything is OK...stay tuned.

Thanks for your replies to my inquiry.

Replacing midnight buffets with Lite Bites was implemented by Celebrity several years ago and thus, not part and parcel of rumored recent "cutbacks" in food service. Likewise, problems with changing chefs/kitchen crew is a constant issue and also not one connected to the rumored cutbacks.

Still hoping for some substantive evidence that food service has, in fact, been noticeably altered within the last month or so.

My wife and I just returned from our first experience with Celebrity, sailing on the Zenith to the Western Caribbean (12/7-12/21). This was our 14th cruise overall on six lines over the past eight years, and we were both thrilled to finally sail on the cruise line that so many people praise.We were for the most part very pleased with our experience on the Zenith. Our stateroom (outside, Europa Deck, midship) was above average in size (172 sq ft.), storage space, ammenities and comfort. No complaints about the accommodations!

We also found the service to be generally superior: our cabin steward, Francis, was absolutely the best we've ever had; the dining room staff, although somewhat harried, were friendly and efficient; the officers and crew were mostly courteous and helpful; and the cruise director, Shawn Cavanah, and his staff did a great job during the entire cruise (although a couple of the shows we saw were definitely sub-par).

So let's get to the quality of the food. First of all, I am a man who loves to eat good and tasty meals. And I'm anything but a fussy gourmand. Put a well-prepared (but not necessarily well-presented), flavorful dish in front of me and nine times out of ten I'll enjoy it. My wife, on the other hand, has owned and operated several restaurants during her lifetime and tends to be much more critical of food preparation and service than I am.We took dinner in the dining room on twelve of the fourteen nights of our cruise. I was disappointed with the quality of the entrée on three occasions, all of which occurred towards the end of the cruise. I found a codfish dish to be dry and utterly tasteless; the only lobster we were offered to be bland and very chewy; and the meat in a lamb shish kebab to be so tough as to be uncuttable and inedible. I returned two of the dishes which, for me, is practically unheard of! On the other hand, the rack-of-lamb meals (I had two) were superb, as were many of the beef, pork and chicken dishes. But I think that three strikeouts out of twelve tries is a poor batting average for the dining room of such a quality cruise line.

Let me say as to my wife's opinion of the quality of the dinner meals that she found several of the soup dishes to be forgettable, as well as two of her starters and three of her entrées. However, we both found most of the appetizers and all of the desserts to be excellent and very creative. As for the buffet breakfasts and lunches in the Windsurf Café on Deck 11, we agreed that they were uniformly well varied, well presented and quite good tasting. And their cakes and pastries were out of this world!

To be fair and objective about the entire dining experience, I would have to say that while it wasn't up to the standard which we had anticipated, it was about as good as we would expect on a fine cruise ship and slightly better than we have experienced on CCL and NCL. However, all of the people at our dinner table (two of whom were on their eleventh Celebrity cuise) remarked that the serving teams appeared to have too many assigned tables to handle efficiently and expeditiously. Despite this, they all did their very best to please and this was very much appreciated by all of our table mates.

As far as the lite bites they did do this before but still had some buffets, so yes the end of buffets IS new and part of the new program. I have not noticed any neg. as far as their food or service in fact just the opposite. I think some people just do not like change and this in itself is part of their complaints. Once people get used to the new but not all that differant changes things should settle down as far as complaints. As far as my husband and I are concerned they are still the best cruise line and provide wonderful food and service.

MY GOOD FRIEND...Bill just got back from the Constellation Christmas cruise and said it was one of the finest ever. Bill is one of the best TAs in the world and I rely on his advice...Good news.

Gourmet Bites was introduced back in the mid 90s but it will now be used to supplant the old midnight buffets...so it has been mentioned as part of the cut back program. The only late night buffets will be the Grand Buffet and midnight deck party.

I still say that the instablility of the kitchen crew counts for most of the complaints.

& day cruises vave the same menu's.11 day's have the same as does 10 day and 14 day.Menu's change periodically as do chefs.The chefs and their staffs can make or break the dining experience.I've cruised 13 times on most of the Celebrity ships and will be sailing on the Summit in January. In allthe years that I've been cruising ,I have never had a bad food experience.

I have cruised with X & the gourmet bites is great. We usually have the late seating for dinner.. so by the time we go through dinner... go to the show with drinks, we're still full, so if someone wants a little something.. the bites are perfect!
