UF Alum here, but I'll try to help you out anyway.
We took the Century to the E. Carib. about a year back. Here is what we did, I'm late twenties btw:
San Juan: you arrive too late for any of the tours to be worth it, so we just walked over to El Moro and then just wandered old San Juan a bit. As long as its still light out, I'd feel safe walking, but I definitely wouldnt do it at night. Its not a long walk from the dock to the fort and there are plenty of small shops to browse along the way.
St. Thomas: we went over to St. Johns on our own. We just took a taxi to Red Hook and took the ferry over to St. Johns. We then took a taxi over to Cinammon Bay. It was waaaaay less crowded than Trunk. In fact for awhile, there were more donkeys on the beach than people.(there are a good number of wild donkeys on St. Johns) It has ok, but not great snorkeling, but the view is just amazing. There are a few shops in Mongoose Junction(think thats the name) that you can go to before taking the ferry back to St. Thomas. There was still plenty of time to do some shopping before going back to the ship. The store owners/taxi drivers were VERY pushy here. Others at our table at dinner said Megans Bay was great, but crowded.
St. Martin: we took the shipwreck snorkeling excursion through the ship. Its basically some small boats that the last hurricane sank. The guides were great, snorkeling again good, but not great. You also get a short tour of the coast of the south side of the island. Free rum punch on the way back, and the guides were very funny, so it was a pretty good time. St Martin did have the cheapest prices on liquor/cigarettes when we were there. Everything Cool was awesome for lunch, but I've read it has since closed down. I heard Orient Beach was great, but there was nudity.
Nassau: We had trouble with an engine overnight and got into this port late and we made the mistake of not going over to Atlantis. We just walked around and shopped. Prices are not very good here, although there was some interesting stuff at the straw market. There is not much to see in downtown Nassau, so I would head over to Atlantis or take a ship excursion to see what sights there are.
