We were on back to back in September and did not have to get off the ship.  You will get 2 sets of documents as Celebrity considers these 2 seperate cruises.

We took our documents for the second leg to the Guest Relations desk a couple of days before the end of the first cruise and they sent our new sea pass cards to our cabin the last night along with our onboard purchases credit card bill.

We went through Immigration the last morning of the first cruise along with the non US citizens and they had a special desk for those of us doing back to back.  Very easy and smoothly done.  I was surprised at how many cruisers stayed on!

For Customs, both cruises are considered 1 trip out of the country.  You declare ALL purchases at the end of the 2 cruises.  So watch your limits if paying duty is a concern.   Of course, if you drink or smoke up what you bought you don't have to declare it!!
