If you are going to be coming from South America I might suggest that you cruise out of San Juan for the Southern Caribbean. Most of the cruises are port intensive so you will get to see more islands with a wider variety between the islands. If your children enjoy active vacations there are many options on each island.
The Constellation is one of the larger Celebrity ships and has a wonderful itinerary for a 7 night cruise. The kids should love the ship too. There are 10 and 11 day itineraries too. HAL sails out of Florida and has fewer island stops. The Z is supposed to be a very nice ship. We do the Caribbean every year and prefer the island choices of Celebrity and Royal Caribbean. The only drawback to the Western Caribbean itinerary involves the potential stop in Jamaica which I would not recommend unless you hire a guide before your trip. It is definitely not a place to let your children explore on their own.
The last couple of cruises that we took our teenagers on we let them take part in the itinerary selection and it turned out to be two of our best cruises.
