Chocolate Zucchini Cake

2 1/2 cups flour
1/2 cup cocoa
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
3/4 cup of softened butter
2 cups sugar
3 eggs
2 teaspoons vanilla
2 teaspoons orange peel
2 cups shredded zucchini (you don't peel the zucchini - just wash it and start grating. Don't squeeze out the natural juices)
1/2 cup milk

Preheat oven to 350 degrees.

Combine flour, cocoa, baking powder, baking soda, salt and cinnamon

Cream butter and sugar. Add eggs one at a time beating well after each.

Using a spoon, stir in the vanilla, orange peel and the zucchini.

Alternately stir in the dry mixture and the milk.

Pour batter into a greased and floured 10 inch tube pan or bundt pan. Bake for 50 minutes ( I always check mine at 45 minutes and it's usually done). Cool in pan for 10-15 minutes and invert on serving plate.

Frost with your choice of frosting. I usually make my cooked chocolate frosting but have had this with a powdered sugar glaze frosting as well.

Very moist and if you don't tell people there is zucchini in it they probably won't know it! You will see small green specks but most people think it's some spice like tarragon. It's a great way to use zucchini if you have some you don't want to waste.

I've done this one and it is yummy! It works well when people give you pounds of those oversized zucchini that you accept with a smile and wonder what the heck you are going to do with it!!
