I thought I was just being too particular, but it's nice to know many others find cruise coffee absolutely wretched. Since I just like a few cups in the morning, what I do when I cruise is to bring along a Melitta one cup coffee maker (they cost around $5 and the one I have is made out of heat resistant plastic- it's not a machine or anything like that. It fits over your coffee cup), some #2 filters, some coffee grounds, and a travel coffee mug. I get room service to deliver a pot of hot water in the morning and I get sugar packages and have a waiter fill my small plastic container with half and half used in the dining room. (Or have room service bring sugar and cream and a cup.) I have my wonderful coffee in my cabin and at breakfast I just have some tea or juice. All of the coffee making items pack up so easy and it is worth it to have some good coffee to start your day. It would really be a shame for you to skip cruising for good just because of the coffee. I hope you'll consider my tip or perhaps it will inspire you to come up with your own solution. Good luck!
