If you book them on your own and not through the ship, you can pre-book and usually find smaller, less crowded excursion for better rates. Grand Cayman Cruise Excursions is a great example, they have some incredible trips and rates. We've used them many times and loved it. They've even helped us plan a double excursion, stingray city on a Catamaran in the morning and then beach horseback riding afterwards. Can't beat the service and the knowledge!!!
