well i can help you with grand cayman and costa maya. first grand cayman, you should call capt. marvins and book the all day snorkle and sting ray city tour. it was the highlight of our trip last feb. we spent the day with the 84 yr old capt. himself . its not a crowded snorkle boat, i believe we had a about 15 peolpe plus three crew. 3 snorkle stops , one to get conche which we ate at the beach club later two different reefs with lots of fish and a 6 ft green eel and a nurse shark and the sting ray sand bar to top it off.
lunch was included and the crew whipped up a huge spread of sea food and salad.
my girls 13 and 15 had the time of their lives.
on our first visit we did the tourist thing and went to hell and the turtle farm and drove down 7 mile beach. the farm was nice but dont waste your time on hell.
At costa maya the chooses are few. there is a beach just to the left of the pier with some nice reefs just off shore. the day we where there the weather turned and the surf was a bit much. we went on a kayak trip down the beach a bit nice but not all that. the shopping here is ok and we did have fun haggeling with the locals.

Ask me after November 24th...we will be back from some of those spots. We will be doing the Rain Forest Aerial Tramway in Costa Rica....some people like to take an off ship excursion and go "pro-pelling." In Grand Cayman, this time we are doing the Cockatoo Catamaran...seems to have some good reviews. Will update when we get back.
Sounds like you are going to be on the Zenith. We are on the Dec 7th sailing with the same ports. You might want to check out the following Yahoo group. It has a bunch of links in the links section on each of the ports.
Grand Cayman - Stingray City is the way to go. Capt. Marvin will give you a good trip.
Costa Maya - why not see the local Mayan ruins? There is not much else to do here, and the ruins are quite a bit more impressive than some in the Cozumel-Cancun area (with the exception of Chichen Itza). Book a tour with the ship, or simply sign up at the information desk once you are on shore (cheaper and you can negotiate how long you spend at the ruins)
Roatan - take a cab to the West Bay beaches (many of the local cabs drop you off at the Princess Maya resort). Beautiful beach, good snorkeling about 250 yards to the left. Take a cab back or stop at the nearby West End community for souvenir shopping. Cab prices are very negotiable. We paid US$20 p/p for an all day "tour".
