One of the smoothest cruises I ever took was an early December cruise on Celebration (same ship you took from Jacksonville) out of Galveston a few years back. Having said that, you just never know. The ships sailing from Galveston these days are larger than the little Celebration so they would probably offer you a smoother ride. Bottom line is that if it is windy, you're going to get some choppy water.
