My husband and I have been sailing Celebrity for several years and we have always been able to get a table for just the two of us in the main dining room.  As Seabob mentioned, use your Maitre D.  The dining room is one of our first stops after we board the ship -- to see where our table is, and make an arrangement with the Maitre D for our own table.  We have always been lucky to have an excellent location.  It also helps that we prefer the late seating -- it seems less people do -- therefore more available tables.  FYI, also a good idea to book your specialty restaurant reservation early too, so you can get the date and time you want.  Hope this helps :)
