You are assigned a table for the week. Your sail/sign card will have the early or late seating along with your table number. Soon after getting aboard, go to the dining room and locate the table. If you are not happy, locate the Maitr'e D and see if you can get it changed. The earlier you do this the better chance you will have of getting what you want.You can request either early or late seating for dinner at time of booking but the cruise line won't confirm either, nor will they confirm a table size.
