My mother did the encounter on CH@OS and had a blast. It's in an enclosed lagoon, and they do very small groups. She had some good time interacting with the dolphins in the lagoon. Her smile was HUGE as she got out of the water.
It's not as commercial as many of the programs around, which is nice. It's mostly you and the dolphins with a few other people and the trainers. She definitely recommended it.
