Excursion Recommendations for Cozumel, Costa Maya, Belize and Santo Tomas de Castilla

Hello!
We are preparing to take our 2nd cruise with our boys, ages 5 and 8, in January on the Norwegian Spirit.
Can you tell me what excusions you'd recommend with little guys?

We have already been to Costa Maya (just walked around and visited the school) and Cozumel (Paradise Beach), so we we're thinking of trying something different. Can anyone recommend a good tour in Costa Maya and a dolphin encounter in Cozumel?

We are really interested in cave tubing in Belize. I have contacted Reggie's Tours, but were wondering if there were others you'd recommend.

As for Santo Tomas de Castilla, I am at a total loss! There doesn't seem to be much there!

As for Costa Maya, it is a great place for snorkeling. Some of the crystal clearest water I have seen. Last time we were there we set up a snorkel trip through a little beach bar & dive shop. Can't remember the name and not sure if it is still there or not. Shoretrips might have some good info on Costa Maya trips.

My daughter (15) said the best thing she ever did was go to the zoo in Belize (I took the older kids snorkeling, my mom wanted to go to the zoo and my 15 year old didn't want her to go alone.) She said there were animals that she would never see in the states - parrots, etc. and the ability to hold the spider monkeys. (I have a great picture of one of the monkeys sitting on her head with his tail wrapped around her chin). There is also a funny story of how the zoo in Belize got their alligator. (Think hurricane.)
