Excursions for Catalina and Ensenada & where to stay in LA

We are doing the 4-night Baja cruise out of Los Angeles in June and I was wondering if anyone has any suggestions for excursions for Catalina and Ensenada?

Also, we will be spending 2 nights in Los Angeles before the cruise and 1 night after the cruise. The 2 nights before the cruise, I thought it would be good if we stayed in the Hollywood and Highland area so we can see a lot of the sights before the cruise. The night after the cruise, we were thinking of staying in Santa Monica by the pier and the promenade. Does anyone have any suggestions for good hotels? We don't mind paying in the $200-$300 range. Also, if you know of anywhere we definitely do NOT want to stay, I'd love to hear that too.

Never been to Catalina but in Ensanada a lot of people enjoy the winery tour. The blowhole is another favorite there.

The Renaissance Hotel it located right at Hollywood and Highland. It is in the $200-$300 price range. Are you wanting to do thing in that area? What kinds of things do you want to do? If you let me know I may be able to help since I live in the area and entertain out of town guest frequently.

The Renaissance and the Roosevelt were the hotels we were looking into. I was thinking the Renaissance sounded better, so we will try to stay there. We are looking to do the normal touristy type of stuff (Chinese Theater, Hollywood sign, Rodeo Drive, etc.). We are also planning to do the Universal Studios Tour and maybe a bus tour of the city. Then after the cruise we are are going to spend one more night in LA and were planning to possibly stay in Santa Monica by the pier.

We'd love any suggestions of any "must see" activities!
