Excursions selling out?

Hi all. We are sailing on the Paradise and had a question about booking excursions. My brother sailed on the Victiory and was able to book his excursions on his cabin t.v. Can you also do this on the paradise?
Also how quickly do the snorkel-type excursions sell out?
