We have been to the tours you mentioned and the suggestion for moby tours is a good one.  The tubing in Belize was excellent, be prepared to walk what seemed to be a mile or more through the jungle with a monstrous truck tube, diving booties (to protect your feet), helmet and goggles slung over your shoulder in + 90s heat and humidity.  The trek was well worth it, a blast for sure.  Be sure you buy a THROW AWAY camera with a flash to photo the experience, you DO NOT want to take a good camera with you.  I wore it around my neck with a shoe lace.  The turtle farm was interesting and enjoyable.  The only thing that kind of bugged me was I expected that this farm was for the conservation and preservation of the sea turtle.  As it turns out it is primarily for the processing and distribution of turtle meat and products around the world.  They do however release about 25% back to the wild and thats a good thing.  Also while on that cruise don't miss one of the Rum factory tours!
