Not the "beachiest" itinerary but I'd think you could find some to your liking. In Belize I would second what Rhen said above about Caye Caulker. Another alternative via water taxi is Ambergue(sp?) Caye but I've heard many good things about Caye Caulker.Sounds like the Costa Rica stop must be in Limon. I seem to remember ship excursions offered to a beach or beaches south of Limon so that's one option. A second option would be to go to Playa Bonita, a public beach area in the Limon/Moin area that is maybe a 10 minute taxi ride at most. There is a quite nice beach there along with a restaurant/bar located adjacent to the beach itself. You'll find more locals than tourists here but don't let that intimidate you. One person there told me in rough English that this beach is also preferred by surfers at certain times of the year. Most excursions are directed towards the Canal and other things associated with it. I think you'd need to meet up with an honest taxi driver who could find a beach, otherwise I'd say the chances and risks are pretty long.
