We've cruised Hawaii a number of times, and particularly enjoy the fine dining on Maui. Last week we were there (by air, this time) and visited a number of great restaurants, mainly to have a week-long celebration of my birthday.

Any one of these places is superior to what you'll experience on-board ship. If you can squeeze in one or two meals, I highly recommend it.
There are comparable places on the other Islands, but this time Maui got our attention.
