Well officially it is called "elegant" night.
From the Carnival website ...
Cruise Elegant Dining Dress Code: Gentlemen - Dress slacks, dress shirts. We also suggest a sport coat. If you wish to wear suits and ties or tuxedos, by all means we invite you to do so. Ladies - Cocktail dresses, pantsuits, elegant skirts and blouses; if you‘d like to show off your evening gowns, that's great too!
Not permitted in the dining room during the Cruise Elegant dinner for ladies and gentlemen: shorts, gym shorts, T-shirts, beach flip-flops, bathing suit attire, jeans, cut-off jeans, sleeveless shirts for men, sportswear, and baseball hats.

It should be noted that Carnival doesn't really enforce the dress code, at least that has been my experience.

There will be one "Elegant" night on a five day cruise. And even though fewer people dress to the nines, most will dress very nice. The shorter cruises seem to be less dressy, than the longer ones. And I've always noticed the later seating dresses much fancier than the early seating.
Last cruise on the Miracle, the late seating line up at the dinning room door was almost 95 % all in black, while the first seating had quite a few fellows in just shirt and tie, no jacket.
If hubby and I were going, he'd be wearing a dark suit and tie, and I'd be in floor length dressy skirt/outfit, and heels.
BTW, the photographers out and about, on elegant nights seem to have multiplied like rabbits. There used to be two or three, last cruise there were at least 10. You could find them set up in every corner available.
