Not familiar with Nassau, however, in St Thomas you could do a half-day sail through a private company and still have time for shopping.  Most of the private sails go to St John or I have heard great things about the Champagne Cat. Sail through Carnival.  So much to do and see in St Thomas shame the ship is there only one day!
