she had sent a SOS for her School events..

so here it is..

Yogurt Poppy Seed Muffins..

oven pre-heat at 400 degrees.bake for 15-20 minutes.( my oven tends to the 16-17 minutes side of time..) toothpick coming out clean..

Pam Spray cupcake/muffin tins..(about 12 muffins -2/3rds batter full )

( and I do double it, and get twice the batch..:grin..)..



2 Cups Flour
1/2 teaspoon salt
1 cup sugar
2 eggs
1 BIG teaspoon poppy seeds
1 teaspoon real vanilla extract
1/4 teaspoon Baking soda
1/2 cup Butter-softened
1 container fruited on the bottom yogurt ( raspberry, strawberry,blueberry etc.)

In bowl stir flour, poppy seeds, and salt, and baking soda..set aside..
In another bowl stir sugar, softened butter, add eggs, then yogurt, and vanilla,mix well, then add dry flour ingredients, whip for about 45 seconds, spoon into muffin tins. Bake.. Cool about 15 minutes on racks, then turn out..enjoy!!..

Yes CC I will have one with my 8 ounce glass of milk for breakfast---sounds good. Love muffins too much.

got an easier recipe

1. get in car
2. drive to bakery or to market that has a bakery
3. buy muffins that were freshly made that morning

:) Yum... get to even eat them in your car :lol

Joanne- your recipe does sound good, though :thumb
