We've traveled out of New Orleans twice...outside of the air being really chilly in NO for the sail away I don't remember anything else that bothered me. However, we traveled in April and October. I wonder if there was some sort of "freak" storm or something your friend "ran" into. I would think the worst time for traveling in those waters would be hurricane season. I've always thought the waters off the west coast (California/Mexico) more choppy ...and the first day out and the day coming back from/to Port Canaveral is usually choppy too. Hopefully, someone with personal experience will answer your post, too.
