I, personally was pleased with the riding in Barbados (Dec 2001) - we were up in the hills so you could see for miles.  The stables were not what I would call a barn, more like covered stalls, but the horses appeared to be well treated and fed.  The saddles were English style (no horn), they provided helmets and the horses were good for the most part, with the exception of one stopping to eat everything and "nature calls".  Experience wasn't a really big issue as they were willing to accommodate any level.  I would characterize the ride as a "trail" but there wasn't  a defined trail.
