Below is my hummus recipe. We live on this stuff. Tahini is expensive, you can also use it in Indian recipes, plus, my favorite thing to make with tahini is tahini & honey. Just put tahini in a small bowl, add honey to sweeten it, and spread on toast. YUM!!
Hummus
2 Large Garlic Cloves
1 Can Chick Peas – drained, with juice saved
2 TBSP Tahini
1 TBSP Fresh Lemon Juice
1/2 Tsp Ground Cumin – or to taste
Salt & Pepper
In Food Processor – mince garlic, and then add rest of ingredients.
Slowly add juice, a little at a time…you will only use a little bit of it.
Blend until Creamy. Taste, add more cumin, s&p, if needed.
Put into serving bowl and refrigerate to chill, before serving; make an
indention in the middle of the Hummus and swirl Olive Oil on top, letting
some go into the indention. Sprinkle with Cumin.
Serve with toasted pita chips, or tortilla chips, or as a spread on a sandwich.
