I think you'll have more fun on this, but I think most cruisers are more into the tour type of thing, than hiking, biking, etc.  At least that's been my experience.  But that doesn't mean you can't have it "your way."  What does your husband want to do?  Hike?  Search for hiking trails near the cruise ship docks in your ports.  Bikes?  Same thing.  Or just rent a car and drive into the wilderness and find interesting places to do Alaskan activities like fish, hike, etc.  At least that's how I approach it.  I'm renting a bike in Ketchikan, taking the Blue Bus to Mendenhall Glacier to hike, and renting a car in Skagway to drive to the Yukon.  None of those are the cruise ship tours.  Not that they're bad, just not for me.  So I'd check with you DH, do some internet research (as you're doing) and then give him some options.
