Or is it better to do it by land tour? Has anyone stayed at the Pacific Beach Hotel in Honolulu?

We just got back from the last Infinity Hawaiian cruise. We didn't do the helicopter tours but heard great things about them. Otherwise, I would suggest renting a car for the day and doing your own thing. It is very easy to get around the islands, basically one road goes around. The Kona side of the big island would be a nice easy drivable tour.
In Maui, there are free busses to Kaanapali beach if you want to vege out for a few hours. Also, the ship has luaus to book. We also did this on our own and booked the Old Lahaina Luau on the internet. It was a little pricey but the drinks were generous and included, the food was excellent and the entertainment was beautiful.
I would recommend the City and Arizona Tour through the ship on your last day in Oahu if you have a late flight like we did. Be prepared for a long wait at the memorial. Our driver was creative and dropped up off to get our tickets and took us on a nice tour of the city and back to the memorial minutes before our sceduled tour. It is not to be missed. Kauai was my favorite stop. The Hawaii of my dreams.
I highly recommend Tom Barefoot Tours for all your off-ship tours. They are held in high regard by fellow addicts and beat the prices of the ships tours. Check out their web site. They can fix you up with helicopter flights.

We booked all of our tours on the Internet. We took Blue Hawaiian Circle of Fire helicopter tour, but, if you can only afford one tour, I'd vote for Kauai. We did both and Circle of Fire was excellent, but wasn't even close to the Kauai tour (I recommend Island heicopters). We rented a car on Maui (stayed overnight there) drove up to Haleakawa, then to Iao Needle. We rented another car in Kona, drove around the south end of the island to Pualu'lu beach (black sand). None of this involved water, although we did book a couple of snorkle expeditions

I recommend renting a car and seeing the Volcanos National Park on your own, unless the lava is spouting... then take the helitour.

Does anyone know how far one has to drive or ride to get to the Old Lahaina Luau from the cruiseship?

When we were there May 2003, you can almost walk to it from where the tenders drop you off. You are tendered in Maui.

Did this itinerary on the Summit in May 2002 and on the Dawn Princess in May 2003. It is a great trip.

Make sure you get the lava flows.

The Pacific Beach Hotel in Honolulu is great. The rooms are very spacious and is not your 'typical' Hawaii hotel where you go to just sleep. Very classy - and the beach is just across the street and farther down on Waikiki away from the 'hotel row'.

We walked to and from the Old Lahaina Luau. It was about a mile. Just walk along the waterfront. It took us about 20 minutes tops.
