We just got back from the last Infinity Hawaiian cruise.  We didn't do the helicopter tours but heard great things about them.  Otherwise, I would suggest renting a car for the day and doing your own thing.  It is very easy to get around the islands, basically one road goes around.  The Kona side of the big island would be a nice easy drivable tour. 

In Maui, there are free busses to Kaanapali beach if you want to vege out for a few hours.  Also, the ship has luaus to book.  We also did this on our own and booked the Old Lahaina Luau on the internet.  It was a little pricey but the drinks were generous and included, the food was excellent and the entertainment was beautiful.

I would recommend the City and Arizona Tour through the ship on your last day in Oahu if you have a late flight like we did.  Be prepared for a long wait at the memorial.  Our driver was creative and dropped up off to get our tickets and took us on a nice tour of the city and back to the memorial minutes before our sceduled tour.  It is not to be missed.  Kauai was my favorite stop.  The Hawaii of my dreams.

I highly recommend Tom Barefoot Tours for all your off-ship tours.  They are held in high regard by fellow addicts and beat the prices of the ships tours.  Check out their web site.  They can fix you up with helicopter flights.
