I low carb for the most part but I miss having a nice little tropical drink by the pool in the summer. Anyone have any low carb tropical drink recipes they care to share? Summer is here and I would like to indulge once in a while without going off plan.

not sure if you wanted alcohol or non..

but here is a non.. and a couple of sites with good info/recipes

Pina coladas are usually full of sugar, from the coconut cream to the pineapple juice. This version is sugar-free, but will transport you to the tropics all the same.
Ingredients:
· 1/4 cup coconut milk
· 1 Tablespoon lime juice
· About a can (or somewhat less) of sugar-free soda, lemon-lime type or ginger ale OR sugar-free lemonade
Preparation:
In a large glass, put coconut milk, lime juice, and ice. Fill the rest of the glass with the soda. Amounts can be varied to taste. Small umbrella optional. :)

Nutritional Information: Each serving has 3 grams effective carbohydrate and 115 calories.

Alcohol vs Carbs
Although alcohol is sometimes lumped in with carbohydrates, our bodies treat alcohol and carbohydrate differently. From a pure calorie standpoint, a gram of alcohol provides the body with 7 calories per gram, whereas carbohydrates have 4 calories per gram. Moreover, the body uses the calories from alcohol first for energy, before carbohydrate or fat.

Great suggestioons. Last night I had some Crystal Light and rum. It was awfully sweet though. Maybe it would be better by the pool. LOL

I also was in a larger town yesterday and stopped by the supermarket. I found a can of coconut milk so in the future I am going to try that pina colada recipe.

Thanks for the ideas.

Here is a low carb margarita recipe from one of my low carb friends. I haven't tried it yet but plan to this summer. All the other recipes this lady has given me have been a hit so I am hoping this will be too. I just bought a Cuisinart ice cream maker and am thinking I could mix this up in there.

The BEST one I've made is to take a diet Mountain Dew (which I normally hate btw) and pour it into a ziploc bag, seal, lay flat and freeze until pretty solid. Then break into chunks, throw in the blender with the juice of 1 lime and a little orange DaVinci's (or a drop of your orange extract perhaps) and your tequila. Blend away!

Makes a nice slushy yummy low-carb margarita.

In the summer I pretty much always keep a bag or two of that frozen Dew in the freezer - great for "spur of the moment" margarita cravings.
