Making Creamed Spinach

I've never made this but it looks easy and straight forward. I plan on making this for Christmas night's dinner...DD is making primed rib and I thought this would be a yummy side. Will this warm up well if I make it earlier in the afternoon or do I need to make it right before serving?

THE best creamed spinach, by far, that I've ever eaten was prepared by our own Mal D. Olive. Hopefully, he or Judi will see your note and respond to it.

YUCK YUCK....SPIT SPIT!!! Creamed spinach! Yeeeewwwwww! Surely there is something better out there for CHRISTMAS DINNER!!! Creamed spinach ranks right up there with the candied yams! Yeeeewwwww! Can you guess.....I hate anything that's creamed!!!!

Now that I've given my opinion....you go ahead and have whatever your family likes for Christmas dinner! We'll be having roast turkey with bread stuffing, cranberry sauce, mashed potatoes, gravy, baked sweet potatos (which are pale yellow and nothing at all like nasty old yams...jand there will definitely not be a marshmallow in sight), brussel sprouts (I know more than a few people that would turn their noses up at that :grin), carrots and pickled beets! All the things we love best! It will all taste super delicious because we will all be together.

Now I'm going to read the other posts and discover how many of our addicts like creamed spinach!! =lolgang

here ya go Denise,

Spinach Casserole

3 packages frozen chopped spinach
3 cups grated sharp cheddar cheese
¼ Cup Parmesan Cheese
1 10oz Can Condensed cream of mushroom soup
3/4 cup mayonnaise
3/4 cup sour cream
2 Tbls. minced onion flakes
Dash or two of Cayenne Pepper


Cook Spinach per package directions and drain well. Mix all other ingredients together and then stir in spinach. Place in casserole dish.

Bake 35 to 40 minutes at 350o, stirring once half way through cooking time.

This can be made ahead and kept in the fridge to cook the next day, and it also reheats very well in the microwave!

Denise - I'll vouch 1000% for that recipe. It's outstanding, and I rarely order "creamed" veggies.

Beryl - are you hinting you don't care for creamed spinach or candied yams? :lol

Jill - a popular recipe "Up Over" for yams, sweet potatoes, etc. is to prepare them with marshmallows.

I'll first boil yams OR sweet potatoes, and once they're soft, drain the water and mash them. Instead of adding water (as I would for regular mashed potatoes), I add a bit of orange juice and a little butter, and mix until smooth. I never add salt to anything - let others do that to taste. I do add a dash of cinnamon and a dash of nutmeg, and mix. I place this in a baking dish, add some marshmallows, sprinkle just a bit more nutmeg on top, and place in the oven (325 F) until the potatoes are heated through and the marshmallows begin to melt/turn brown on top. Occasionally, when I'm adding the orange juice, I'll also add a drop or two (or three) of Triple Sec or Orange Curacao. ;)

Mary Ann, no offence intended, but I don't think I could eat that as a side dish. It still sounds like a dessert to me. Might be OK with ice cream.
I make mashed potatoes, sweet or otherwise, with butter, a bit of cream or milk, and lots of black pepper.

Jill, it really is a side dish for turkey....it's a staple at our Thanksgiving table!

This sounds really good. 3 packs of spinach? How many people does this serve? I thought of cutting it in half =shrug Can you MAKE these in the micro? I always have trouble because I have so many dishes to cook at the same time. Beryl, you would not be :) at my house on Christmas Eve. Every year I make Praline Yams with Princella canned yams...they are delish and my SIL's favorite. So much so that I call them "Kathy's yams." I usually don't put marshmallows on top, tho. Last year DS#2 asked me why I didn't. I said, after all these years of making them, you are asking me this now??? =eek Jill, come to think of it, they could be served as dessert with ice cream too! :thumb

This makes a good size casserole, that would serve prob 8 to 10 as a side dish. We like it so much though that for our crew it is more like 6 to 8. Don't know about microwave as i have never tried it, but the one thing you would not get is the browned top that forms from a conventional oven.
