For hotels in Miami do a advanced search on either Travelocity or Epedia and list as one of your options free shuttle.  They will usually give you a free ride from the airport to the hotel and then to the cruise port.  You can also search for complimentary breakfasts.  We have gotten both.  The airport isn't that far away and it is cheaper and faster to take a cab from the ship on your return.  It would be impossible to walk to the pier.  A cab shouldn't be more than $15 from any hotel in the area.

As for watching the ships come in the day before I don't think you will see any as they usually come in the same day very early and leave around 6 pm.

We took a cab / van to Atlantis.  Can't remember how much it was but I think it was around $5 pp each way.  They have the fares posted at the dock.  The cabs are really vans that hold about 6 to 8 passengers.  We were also nicked on the way there to pay the $2 toll across a bridge.  All the other cheap SOB's in the van were playing dumb and just sitting there.  Being a good guy I gave the money to the driver.  No one else made a offer to give me a buck.
