Need Help with Excursions out of Cartagena Colombia, Colon Panama, Puerto Limon Costa Rica and Grand

We are cruising on Celebrity's Constellation on 12/1/08 and prefer to take the ship's excursions out of Cartagena Colombia, Colon Panama and Costa Rica. I walk with a cane and would have to do some type of activity that is not too strenuous.

If you have visited these ports, can you please suggest some ship excursions out of these area's?

We want to do something involving the Panama Canal...Is the Gatun Locks the most impressive to visit?

In Costa Rica we thought about doing the Pineapple Plantation because we LOVE Collin Street Bakery Fruit Cakes...Has anyone done this excursion? Is it a strenuous activity? And is it any fun? Would you suggest doing another activity?

Is it even recommended to get off of the boat in Cartagena Colombia? What excursions do you recommend? And is it safe enough in Colombia, Panama and Costa Rica?

Finally, we have been to Cozumel and done the Dolphin Encounter which we loved and the StingRay thing in G. Cayman....Can you recommend something else in these ports?

Tour to the company of Pineapple is huge, can be observed the different processes that they give to the fruit.
The tour is divided in 5 stages which are:

First Stage: Tourists are welcome at the Rancho "Los Laureles
Second Stage: The view spot "El Guacimo", is our second stage where one can learn about the history of the pineapple while at the same time admire a beautiful humming bird garden right next to the Cimarrones river.
Third Stage: We enter the packing plant, where the pineapple is received from the fields, prepared and packed. The tourists can witness all the hard work involved in the process by the packing plant workers; reception, selection, waxing, crown fumigation, packing, palletizing, and freezing.
Fourth Stage: The Hacienda, besides producing fresh pineapples, also produces dried pineapple to export into foreign markets. In this stage the visitors can learn about the process of dehydration which the pineapple undergoes. The different steps are: reception, then heart extraction, after this comes pealing and slicing, then the distribution of the slices onto the carts, following comes the carts into the ovens for drying and the last step is the packing.
Fifth Stage: In this last stop our visitors can enjoy our souvenir shop and buy all types of Costa Rican souvenirs.

Another one tour is visiting the plantation of banana tree of the company Del Monte, after can be enjoyed the Jungle Boat through the Canal of the Tortuguero, observing the fauna and the flora and will take finally it to a small beach (Pretty Beach) where it will be able to also enjoy the Caribbean kitchen and the International.
