Pam’s Shrimp Cocktail
2 lbs Shrimp (51 – 60 size) – cleaned, shells removed and cooked
(you can use fresh or frozen (thawed completely before adding marinade)
Marinade:
1 Cup Cilantro – chopped fine
1 Small Onion – diced
1 Cup OJ
1/2 Cup Vodka
3/4 Cup Ketchup
1/4 Tsp Hot Sauce – (more to taste)
1 Cup Lemon Juice
1/4 Cup Olive Oil
Mix marinade well and add shrimp. Marinate for 3 hours, up to 6 hours. Serve.
