I learned this one in Thai Class. It's good with grilled chicken or beef.
Peanut Dipping Sauce
8 tablespoons crunchy peanut butter
1 small onion, finely chopped (shallots can be used also).
1 cup coconut milk
1 TB brown sugar
1 teaspoon red chili powder (Cayenne)
1 stalk lemon grass finely chopped or 1/2 teas. dried (I've left this out before and it's still good)
1 TB fish sauce
1 TB dark sweet soy sauce
2-3 TB peanut oil.
In a saucepan, combine all the sauce ingredients and bring to a boil stirring frequently. Remove from heat and pour into small bowls. Allow to cool slightly and use for dipping.
