I learned this one in Thai Class. It's good with grilled chicken or beef.Peanut Dipping Sauce8 tablespoons crunchy peanut butter1 small onion, finely chopped (shallots can be used also).1 cup coconut milk1 TB brown sugar1 teaspoon red chili powder (Cayenne)1 stalk lemon grass finely chopped or 1/2 teas. dried (I've left this out before and it's still good)1 TB fish sauce1 TB dark sweet soy sauce2-3 TB peanut oil.In a saucepan, combine all the sauce ingredients and bring to a boil stirring frequently. Remove from heat and pour into small bowls. Allow to cool slightly and use for dipping.
