You don't have to do a thing at the ports. Most of these "shore excursions" are kind of like tourist traps, such as "dolphin Encounter, or dolphin swim, wave runner/snorkel, ATV, bumper boats, ect" and are usually overpriced anyway.  I am suprised they don't have Putt-putt golf yet.

 I hardly ever book shore tours ahead of time.  Just get off the ship and get a feel for the place.  You can usually find a beach or shopping within walking distance(which is free) and if you still choose to do something, most of the excursions are offered by the venders at port for a cheaper price.  Basically you can do nothing and have a good time.
