Port Adventures - advice?

Does anyone have any advice on what port adventures (or and experience with any of them) for the following ports?
Cabo
Mazatlan
Puerto Vallarta

Going on a Mexican Riviera cruise are we? What are your interests?

We are pretty open. I think the only thing we are for sure doing is the Canopy Adventure. That is only something we have planned and that is only one port. Since this is my first cruise I am trying to get as much information as possible.

Well, I am going to the same three ports in June. I will be on the Mariner of the Seas. So I've been checking into the shore excursions.

I've been to Cabo three times, but I have not done a real city tour yet. So I'm considering something that provides for photographic opportunities. I boat trip out past El Arco and a stop at a hill top restaurant is what I am lining up.

I've only been to Mazatlan once and saw the Papantla Flyers. Unfortunately not much else is interesting that don't last all day. I might end up at Stone Island.

I've been to PV three times. The Tequila factory, seal and dolphin experiences are all interesting (seal and dolphin swims are expensive, and I've already done both in Cozumel). So I might end up spending all day visiting a small out of the way town.
