So, yes we were hoping for the best... had read that the service was not that great, since all crew is American. But it was really bad - we've been on 5 cruises (3 NCL) and the cabin stewards and restaurant servers, especially, were nowhere near up to par. Our bathroom was so dirty I had to clean it myself (am I tipping for this?), had to beg to get rugs vacuumed (come on, now, how long can it take to vacuum 10 sf of carpet?). The hallways were also dirty. It was like staying at some dive motel in the backwoods.
The restaurant and bar staff, with a few exceptions, were the typical American young people - standing around talking to each other, acting like you're bothering them if you ask for something. Our friend asked for jelly every morning and hardly got any. (Did we have to start asking for Jelly?) It was really like being in a tourist city (we live in Myrtle Beach, SC, so we can speak with authority here), where the kids just roll their eyes and heave sighs when you expect them to actually work. We are Americans, so it's really embarrassing to say that people from other countries work harder and seem much more concerned with our satisfaction.
And, oh yes, no midnight chocolate buffett!
The ship was very pretty. Hawaii was incredible, and if you go on NCL American (which we found out is a fleet of three - Pride of Aloha, America and Hawaii), don't expect the service you get from other NCL ships. Just enjoy the beaches, the incredible beauty of the place, and expect the worst - that way you'll be pleasantly surprised!
