Been back now a few weeks from your Cruise on Carnival Conquest. After 3 cruises on Carnival we are moving over to Princess. We have always loved the food on Carnival until the Conquest. The dinning room was so bad that after the second night we stopped going. We went to the supper club two nights and that was great, rest of time we had room service and it was better then the dinning room. We didn't let it spoil your cruise and contacted Carnival when we got back. So we would love to here about the service and waiters on Princess, we will be on the Sapphire in April and can't wait.

Having sailed both on Carnival and Princess, food is subject. Some people love the food on both lines and some people say it's ok. On one of my Princess cruises, the wait staff in the dinning room was very slow on brining the meals out, and 2 nights I had steak for dinner and it was on the dry side. On my other 2 Princess cruises the wait staff was better. I haven't had any problems with the food and the wait staff on Carnival.

We find Princess dining to be a bit more subdue than Carnival. There were things we like on the menu and things we don't, just like any place you dine. Do try the different homemade icecreams on the dessert menu. We love them!

One difference is the traditional vs anytime. If you want the same waiters and for them to know your likes and dislikes, dine at the same time, same tablemates, etc. then choose tradtional. If you like the flexibility of dining at different times and don't mind that they won't know you automatically want tea at dinner and coffee with dessert than anytime dining is wonderful. We really enjoy anytime dining with Princess. If we are enjoying something we don't have to leave to get to dinner. We like not having a set schedule. Sometimes we like to linger over a sunset a bit longer or eat early one evening. We also have met some really wonderful people by being seated with different people on different nights.

You also have the option of sometimes making a standing reservation in anytime dining but IMO that defeats the purpose. Nice that there are lots of choices though!

Enjoy your first Princess cruise!
