Good question.  Hope someone can answer it for you!  I'm wondering the same thing.

I saw the cabin steward open one when we were on the Grand last time and from what I remember, it seemed to stay open - like it was sticking to the partition or it was locked in place.  I would think having it swing freely would be a big problem on a ship.  Wish I had paid more attention at the time.  :dizzy
